Having a family dinner in my house is very important. It is a time to unwind together, spend time together, and talk about our days. It is something that was always important to my mom when I was growing up, and it is a tradition that I wish to continue.
The problem is, my life is pretty different than what it was when I was growing up. As a single mom raising two young boys, I don’t have a lot of time to make elaborate meals. I am more of a slow cooker mom.
One of the first recipes that I learned to make while I was in college was a balsamic baked chicken. This chicken is so easy to make as all you have to do is put chicken breasts in an oven-safe dish and coat it with a bottle of balsamic dressing. Bake on 350 degrees for several hours, turning the chicken every hour and a half. This is a great, painless way to make some delicious chicken.
While the chicken is cooking, you can prepare a large, family-style salad. Of course, you want to make a tangy and delicious dressing to go with the salad which is why I love this lemon balsamic dressing. Plus, it only takes 5 minutes to make.
To make the lemon balsamic dressing you will need:
- 3 tablespoons fresh lemon juice
- 2 teaspoons of balsamic dressing
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 garlic clove, minced
- 1/2 cup extra virgin olive oil
In a small bottle or bowl, mix all of the ingredients together. They will separate into a suspension, so you will want to stir or mix right before serving.
Once the chicken is finished, use a fork to shred the chicken. After you have shredded the chicken, place it on the top of the large bowl of salad.
Now as much as I love family-style salads, I like something that will take the salad to the next level (as well as something I can snack on while I’m making dinner!). This is why I love Sahale Snacks.
These snacks are delicious on their own, but I receiver discovered they are so much more. They are perfect for salads!
I purchased the Honey Almonds Glazed Mix and Maple Pecans Glazed Mix. Both are amazingly delicious and are perfect for topping a salad. What is even better is that they are Gluten-Free Certified, Non-GMO Project Verified, and even Kosher.
These snacks are perfect for not only as a salad toppings, but also great with desserts, beverages, or just on their own.
You can purchase the Sahale Snacks at Ahold banner stores such as Giant Carlisle, Giant Landover, Martins, or Stop and Shop. I was able to find mine in the nuts isle of my local Martins. Be sure to download the $1.50 digital coupon for the 4 ounce package of Sahale Snacks. The offer runs through 12/29/17.
I love being able to have a delicious family meal with my boys, and I love that Sahale Snacks gives me the opportunity to make something delicious for my family.
