It won’t be long before school is back in session. For my school district it is about a month away. This means it’s time to head to Walmart to prepare for busy weeknight meals.

When you are trying to juggle homework, sports practices, and other activities it can mean that preparing dinner can be rather chaotic. It can be hard to squeeze everything in!

This is why I have come up with some easy go-to weeknight meals. One of my, and my kids, favorites is grilled chicken quesadillas. They are not only delicious, but when you use Swanson® Premium Chicken it really only takes a few minutes to make!

School Night Grilled Chicken Quesadillas

For this recipe you will need:

  • 1 cup Pace®
  • Flour tortillas
  • 1 cup shredded cheese
  • 1 can Swanson® Premium Chicken, drained

Open the flour tortilla and fill half of it with the Swanson® Premium chicken. This chicken is already cooked and ready to use. Plus it’s low fat and heart healthy so it is perfect for this recipe.

Drizzle the Pace® over top of the chicken. I used mild salsa since this will be for my kids and me, but if your family likes things spicier, Pace® makes a medium and hot version of their salsa as well. Southwest born and bred, Pace® is made from a trusted consistency of 70 years of southwest flavor know-how. Then add some of the shredded cheese to the top of the chicken and salsa.

Fold the flour tortilla in half and place it on a preheated griddle or a skillet. Press the two sides together using a spatula. This will ensure that everything melts together. Once the one side has been browned, flip the quesadilla over and brown the other side.

Once both sides have been browned, remove the quesadilla from the griddle and cut into three triangle shapes. Serve the quesadilla with a glass of V8 Splash®. Not only does it taste great but also is a good source of essential antioxidant vitamins A & C.

I love having meals such as these grilled chicken quesadillas on hand for busy school nights. What is even better is that I can pick up all of the ingredients, plus whatever else is on my grocery list, at my local Walmart.
