One of my goals recently has been to start making more meals at home and eat out less. The problem is, I have had to come up with some new recipes that not only I like, but also that the kids like. My kids are very picky eater so sometimes this is a struggle.

Recently, I did discover that the boys enjoy both bacon and hash browns. Of course, I could make them a traditional breakfast with bacon, eggs, and hash browns, but tonight I decided to get a little bit creative and create a Cheesy Bacon Hash Browns Breakfast Meal.

For this recipe I used some of the fresh, Simply Potatoes® Hash Browns. I love using Simply Potatoes because these are fresh cut, never frozen potatoes. This means you don’t have to worry about freshness or even freezer burn. Just buy several of the varieties and keep them in the refrigerator until they are ready to use. 

In addition to the Simply Potatoes, I used:

  • 4 strips, crispy cooked bacon (shredded)
  • 1 small onion (diced)
  • 1 cup shredded cheddar cheese

I shredded some strips of crispy, cooked bacon and added them to a nonstick skilled along with the onion. I sautéed them until the onions were soft. 

I then added in the bag of Simply Potatoes Hash Browns and stirred in the onions and bacon. I cooked the mixture in the skillet until the potatoes were golden brown.

After the potatoes are cooked, I sprinkled the cup of cheese over the potatoes and mixed it together, allowing the cheese to melt. 

After the cheese has gotten melty, you can remove the food from the skillet and serve. 

My kids absolutely love this meal option and I know that it is something that I am going to be making a lot more in the future!
